As a self-proclaimed foodie, one of my favorite things about food is how it is constantly changing. It may sound silly, but just like in the beauty and fashion industries, food trends come and go. Back in the ‘90s it was all about the low-fat craze, and today we’ve seen a major shift toward organic, natural foods—which, as a trained organic chef, I’m LOVING.
Another food trend I’m a huge fan of? Acai bowls! Social media has definitely played a part in popularizing the superfood from Brazil; it seems you can’t scroll through your Instagram feed without seeing a bright, beautiful acai bowl staring right back. And while you can find them in many restaurants, health food stores and juice shops, I’m impartial to making my own acai bowls at home. They’re flavorful, full of nutrients, and one of the fastest, easiest meals you can make. Here’s how I make mine.
Add the first four ingredients to a high powered blender (we use a Vitamix) and blend together, leaving the consistency thick—think ice cream or fro-yo.
Take your halved coconuts or bowls and fill 1/4 of the way full with granola, a small handful of cut fresh fruit (berries, banana slices, etc.) and a drizzle of honey.
Enjoy immediately!
